Food: Chilli Chicken Recipe

I've made it no secret that I love me a good Buzzfeed 'Tasty' video, and this one caught my attention in the week.

So of course, I had to make it. And it was ah-mazing. So amazing, I'm sharing it with you whilst it's still digesting.

I love trying a new recipe, and I love it when I can make it Slimming World, or whatever plan I'm following at the time, friendly. Which I've done for this one.

My plate was 1.5 syns, and only half syn of that was for the actual chicken. The other syn was because I used an Uncle Ben's Microwave Rice.

Mr Biscuit said he liked this just as much as a Chinese Takeaway, and said he even preferred it. And it was healthy.

I think that's exactly why the phrase winner, winner, chicken dinner exists. Right?

So, here's how you make it:

Serves 2 for half a syn each

2 Chicken Breasts, chopped into chunks
1 Red Pepper, sliced
1 Green Pepper, sliced

1 Chopped Red Chilli
3 Garlic Cloves, crushed
3 Tbsps of Dark Soy Sauce
2 Tbsps of Tomato Puree
100 ml of water
1 Tsp of Honey

1. Heat up a frying pan and add your chicken chunks. Season with salt and pepper and cook until browned.
2. Then add your peppers and cook until almost soft (or keep 'em crunchy if that's your thang.) Once cooked through, use a slotted spoon to remove the chicken and peppers from the pan and set aside.
3. Add the chilli and garlic to the pan and fry for about a minute (don't let it burn). Then add the Dark Soy Sauce, Tomato Puree and water.
4. Leave the sauce to simmer until it's thick. Once the sauce has thickened, add the honey and put the chicken and peppers back to the pan.
5. Give everything a stir until combined and serve.
