Food: My Filling and Healthy Birthday Cake

If you follow me on either Instagram or Twitter, then you'll probably be aware that last Monday was my birthday!


It is tradition in my house that on our birthday's I make a Betty Crocker Carrot Cake, however due to the fact it's around 10pp a tiny slither I decided this year, I'd make myself a Filling and Healthy cake instead. (Although, my lovely boyfriend did buy me a triple chocolate brownie cake, so there's that...)

I got the inspiration from a) my love of fruit cake (heart eyes emoji) and b) how cool I think the 'naked cake' trend is.

So here it is, my naked Filling and Healthy Fruit Cake, I worked it out as 2pp a slice, if cut into six slices.

Ingredients

450g of oats

1 apple, grated

14g of soft brown sugar

1 tsp Bicarbonate of Soda

2 eggs

150ml of skimmed milk

120g raisins

Handful of chopped cherries

1 tbsp of Amaretto

1 tsp of Icing Sugar

Handful of strawberries, quartered

Method

1) In a food processor, blend the oats, apple, sugar, bicarb and eggs, then slowly add the milk.

2) Add to a bowl and stir in the remaining ingredients (minus icing sugar).

3) Grease two-three baking tins (i used Fry Light) then pour the mixture equally between the them.

4) Bake in the center of a pre-heated oven (around 180 degrees) and cook for around 40 mins (depending on the size of you tins.)

5) Leave to cool. Once cool, layer on top of each other, and sieve icing sugar over the top, place strawberries around and serve.
