So since my last pulled pork recipe, way back when, I've had a little jiggle about the to the recipe, and thought I'd share with you what I do now, as I often get asked.
I've now moved closer to the Slimming World Pulled Pork recipe, but add my own little biscuit tweaks.
I must say, it tastes flippin' awesome.
"BBQ Pulled Pork" servings="4-6" time="4hr 30mins" difficulty="easy"
Ingredients:
1 joint of pork, all fat removed
5 tbsp of Worcestershire Sauce
3 tbsp of Balsamic Vinegar
1 tbsp of Mustard Powder
1 tbsp of Smoked Paprika
1 tbsp of Hot Chilli Powder
2 tbsp of Sweet Freedom
8 tbsp of Passatta
1 can of kidney beans
Method:
1) Mix all the ingredients minus the pork and kidney beans in a bowl.
2) Place the pork in a large casserole dish and pour the sauce over the top.
3) Place the dish on the hob over a low-medium heat four around 4 hours.
4) Remove the pork from the dish and shred with two forks to pull. Whilst doing so place the sauce back on the hob over a high-medium heat, stirring occasionally,
5) Add the pork and kidney beans back into the sauce and cook for a further 15 mins.
6) Dish up and serve.
