Food: Turkey Meatball Curry

This recipe comes from me seeing my boyfriend and his parents having a takeaway and having a meatball curry, and me thinking mmmm, that sounds good.

So here we go. I must say, it's rather tasty!!!

"Turkey Meatball Curry" servings="4" time="1 hour" difficulty="easy"

Ingredients

400g Turkey Mince

2 shallots

Lea & Perins

Mixed Herbs

2 large onions, roughly chopped

1 can of chopped tomatoes

Curry powder (I used medium & tikka)

1 tbsp of soft brown sugar

250g mushrooms

Method

1) Place your turkey mince, shallots, a splash of Lea & Perins and sprinkle of mixed herbs into a bowl and combine. Once it's all combined shape into little meatballs and grill for around 15 minutes, turning half way.

2) Fry your onions with fry light for around 5 minutes then sprinkle the spices over the top. Once it's all combined pour over the chopped tomatoes and re-fill the can with water and tip in. Also add the brown sugar and simmer for five minutes.

3) Transfer the onion mix to a bowl and blitz with a handheld blender (or use an actual blender) until a sauce is created, then return back to the pan.

4) Add the meatballs and mushrooms to the sauce, bring to the boil, cover and leave to simmer for around half an hour.

Notes

I haven't specified amounts of spices etc. as it's all up to personal preference, and I just chuck lots in.
