Food: Filling and Healthy Blueberry Loaf

Fatty wants a biscuit blueberry loaf

It feels like it's been far too long since I got my filling and health bake on, so today I'd like to introduce to you my 'Filling and Healthy Blueberry Loaf'.


I've basically spent the past week snacking on it, and boy was it good.

The thing with me is I like blueberries, but they have to be hard and juicy. I don't like it when they turn a bit soft. So when my punnet was erring on the soft side, I decided to put them in a cake. I also think this recipe would make epic muffins too. The possibilities are endless.

"Filling and Healthy Blueberry Loaf" servings="6-10" time="1hr 10mins" difficulty="easy"

Ingredients:

300g oats

2 eggs

100mls of skimmed milk

Drop of Almond essence

1 banana

Blueberries (however many you fancy)

Method

1) Place all the ingredients in a blender (minus the blueberries) and blend until a thick dough is formed. (Be careful as I managed to blow up my handheld blender doing this.

2) Stir in the blueberries and pour into a baking tin.

3) Cook in a preheated oven on 180 for around 45.

4) Remove, cool, cut and serve.
