Filling and Healthy Lemon Drizzle Cake

Another week, another filling and healthy cake recipe.


I love a good lemon drizzle cake, and I also love passion fruit, so I've combined the two together and boy am I glad I did.

I made mine in individual little muffins, but you could go crazy and make a whole cake too (I've done that and it tastes just as good.)

Ingredients

14g Soft brown sugar

3 eggs

75g of oats, made into flower

1 lemon, zest and juice

1 Passion Fruit

Method

1) Whisk the eggs with the sugar for about 5 minutes, until the mixture becomes light and airy.

2) Gently fold in the flour and lemon zest until everything is well combined.

3) Spoon the mixture into your baking container and bake in a preheated oven at 170 until browned (around 20 mins)

4) Whilst they're cooling down, mix the passion fruit with the lemon juice until it's all combined.

5) When cool, poke holes in the top of the cake and pour over the drizzle.
