Soz 'bout the self-indulgent title of this blog post, but I wanted to call it something better I thought as there are so many Sweet Potato Casserole recipes out there, I should differentiate mine somehow.
So yeah, this is one of those experiments gone right kinda recipe things.
The best bit is it's a really simple, bung it all in a pot and leave it to stew in the oven kind of thing. I bet it would probably work in the slow cooker too.
It's got a nice rich, smokey flavour too it, and a hint of a kick too. Perfect on a cold lunch/evening!
Ingredients:
4 large sweet potatoes, peeled and chopped
1 tsp of Chipoltle Paste
3 peppers, cut into strips
1 can of mixed beans in tomato sauce
1 can of chopped tomatoes
150 ml of chicken stock
2 chicken breasts
Method
1. Mix your sweet potatoes with the Chipoltle Paste until evenly coated and place in your cooking pot.
2. Add the remaining ingredients (minus the chicken breasts) and stir until everything is combined.
3. Pop the chicken breasts on top and cover with a lid.
4. Pop in the oven (on medium) for around two hours until the sweet potato is soft.
5. Remove the chicken breasts and shred, then return to the casserole and serve.
