Food: Pulled Pork Mexican Lasagne

Pulled Pork Mexican Lasagne
This here recipe is the delicious child of two other recipes that are on my blog that I decided to combine and see what would happen. Spoiler alert: delciousness happened. 

In case the name didn't give it away, this recipe is a combination of my Pulled Pork recipe and my Mexican Lasagne recipe. 


To make things easier for me, this time I cooked the pulled pork in the slow cooker overnight, then added a can a of mixed beans and some sweetcorn to it in the morning.


I then layered by pulled pork with some Banana Chillies (best things ever) and topped with some Weight Watchers wraps. You can also add some yogurt/sour cream before the wraps, however I did that last time, when I wasn't feeling well and it's kind of put me off of yogurt at the moment, so I skipped it this time.


Once you've run out of pork, top it with your cheese, bang it in the oven and Bob's your Uncle. Just make sure you end on a pork layer, not a wrap layer or else it'll most probably burn.

I learned that the hard way.

I cut mine into six and it's only 1SP per portion on no count!


Ingredients:

1x portion of Pulled Pork
Sweetcorn (however much you like)
Weight Watchers wraps (I'd get one pack, but depending how much pork you make you may need more)
90g 50% Fat Cheese (I get mine from Asda)

Method:

1. Cook the pulled pork and then add the sweet corn to it.
2.. Begin layerying the pulled pork with the wraps until you run out of pulled pork.
3. Top with cheese and pop it in the oven for around half an hour on 200.
4. Remove, cut and serve.
